Why Dexter Beef?

Dexter cattle are an Irish heritage breed known for exceptional beef quality. Unlike commercial breeds pushed to grow fast on grain, Dexters mature slowly on grass—developing rich, complex flavor and natural marbling.

Our steers process at 24-36 months, nearly double the age of feedlot cattle. This extra time on pasture means more developed flavor and beef that actually tastes like beef used to taste.

Frequently Asked Questions

Many farms charge by live weight or hanging weight, which can be confusing and unpredictable. You might not know your final cost until after processing. We charge by packaged weight—the actual beef you take home. You can weigh the packages yourself. No mystery, no math, no surprises.

Plan for about 1 cubic foot per 25-30 pounds of beef. A whole beef (~200 lbs) typically requires a 7-10 cubic foot chest freezer. A standard upright freezer works too, but chest freezers are more efficient for long-term storage.

Properly vacuum-sealed beef maintains quality for 12-18 months in the freezer. Ground beef is best used within 4-6 months. We recommend eating your oldest packages first and rotating stock.

We primarily sell whole beef because it's the most efficient for our small operation. However, if you can coordinate with a friend or family member to split an animal, we're happy to accommodate that arrangement.

Processing times depend on our schedule and the processor's availability. When you reserve, we'll give you an estimated quarter (Q1, Q2, Q3, or Q4) for pickup. We'll contact you with specific dates as processing approaches.

Our beef is processed at a USDA-inspected facility. All processing meets federal food safety standards.
